Homemade Ketchup

Makes 1 to 1-1/2 cups

  • 2 cups tomato juice
  • 1-3 tablespoons white vinegar
  • 1 bay leaf (optional)
  • Salt and pepper to taste
  • Honey to taste
  • Soy-free fish sauce to taste (optional)

1. Mix all ingredients, except honey and fish sauce, and simmer on stove until thick, stirring with a slotted spoon to prevent sticking.

2. When almost the desired thickness, remove bay leaf and add honey and optional fish sauce to taste,

3. Pour or ladle into sterilized jars and seal immediately or place in small containers and freeze.
