Lemon Basil Pesto

Makes about 1 Cup

  • ½ cup pine nuts
  • 2 to 4 cloves garlic, peeled
  • 1 to 2 teaspoons lemon zest
  • ¼ to ½ teaspoon Herbamare or sea salt
  • 3 cups tightly packed fresh basil leaves
  • ¼ cup extra virgin olive oil
  • 2 to 4 tablespoons fresh lemon juice

1. Place the pine nuts, garlic cloves, lemon zest and Herbamare in a food processor fitted with the ‘s’ blade. Pulse a few times until mixture is coarsely ground.

2. Add fresh basil leaves. While the food processor is running, slowly add the olive oil and lemon juice through the feed tube. Continue to process until pesto is the desired consistency.
